Freytag was born Arnold Alan Freytag in Chicago, Illinois on December 5, 1948. He attended the University of Iowa and earned a degree in theater. After graduation, he moved to Los Angeles to pursue an acting career.

Freytag's first major role was in the 1986 film Speed. He played the role of a security guard who is bribed to allow the thief (played by Keanu Reeves) access to the building. The role earned him praise and he went on to appear in other films such as The Negotiator (1998), The Cable Guy (1996), and The Whole Nine Yards (2000).
