Schimmel was born in Los Angeles, California in 1970. He grew up in a close-knit and supportive family, and from a young age, he was exposed to both the entertainment industry and the Catholic faith. Schimmel's mother was a professional theater actor, while his father was a devout Catholic who taught him the importance of faith in his life.

Schimmel attended Loyola Marymount University, where he received a bachelor's degree in film production. After graduation, he began a career in the film industry, working as a production assistant, screenwriter, and editor. He soon developed a passion for making documentaries, and in 2004, he released his first feature-length documentary, The God Who Wasn't There.
